Mo is the daughter of immigrant parents from Vietnam.
In 1981, her parents opened the first pho restaurant in Portland, Oregon. At the age of 11, she started cooking in the restaurant with her family. From there, she began expanding her cooking abilities by bringing healthy gourmet dishes to her kids. Aside from the typical American mom, she created flavors and dishes through her tastebuds rather than recipe books. From one new dish to the next, her family and friends encouraged her to take her abilities to the next level and open Mo Pho Mi.
